Re-Energising Citrus Salad with Manuka Honey

In a small jug make the dressing by adding the oil, salt, pepper, honey and lemon juice and whisk until all the honey dissolves. Finely chop the coriander stalk and place into the dressing and leave to one side.

On a large platter, scatter around the satsumas, oranges, grapefruit, lime and onion. Scatter some of the coriander leaves and then drizzle over the dressing, serve at room temperature.
